Brine calculator: concentration only

w/v % = salt(g) ÷ water(mL) × 100; w/w % = salt(g) ÷ (salt(g)+water(g)) × 100. Assumptions: water density 1 g/mL; computed on unrounded values, displayed to 1 decimal; salt 0–500 g, water 100–10000 mL, out-of-range clamped. Salt type only triggers the NCHFP note; it never changes the arithmetic.

Why this site never answers recipe-ratio intent: no basis for a universal number (intent mismatch) — valid recipes in specific contexts may exist; we neither assert nor deny them, we simply set no target values.

How concentrated should the brine be?

This site does not answer: no basis for a universal number. Compute your own recipe's concentration with the calculator and learn why weighing must be exact (NCHFP rules).

What is the difference between pao cai and suan cai?

This page does not cover suan cai (no documented sources): it compares only the continuous-round fermentation mechanism of Sichuan pao cai. Comparing without sources violates this site's rules.

Are Romanian pickles a probiotic food?

This site makes no efficacy claims. Only the three-level distinction: fermented food ≠ contains live cultures at eating ≠ meets clinical evidence standards. Each level separate, never mixed.

Are vinegar cucumbers fermented?

In this site's frame: direct vinegar acidification is acidification, not fermentation (NCHFP definition + national classifications). The 1870/1865 vinegar pickles are likewise not “modern laziness”.
