Method and sources (D1–D6)

D1 · corpus (read locally in full)

corpus_muraturi_romania.md v1.0 (2026-09-13, 56KB, read in full): §1 three techniques / §4 vinegar history / §5 murătoare / §13 microbiology + probiotics + sodium / §21 ten bans / §3 regions. Citation exact to section + S number; grade D never serves as evidence. Grades: A = peer/official/primary-historical/large-corpus, B = institutional/museum/solid-local-history/regional-dictionary, C = local-witness/commercial/generic-press, unknown S type → C; states: documented / documented_local / comparative / interpretation / hypothesis / data_gap.

D2 · muraturi_site_data.json (classification authority)

6 techniques (id field: brine / vinegar / hot_vinegar / natural_brine / hybrid / layered) + 30 ingredients (name) + 11 glossary entries (term). JSON classifies, corpus narrates; neither teaches cooking.

D3–D4 · NCHFP (re-verified)

Procedure page (513KB, re-verified 2026-09-17): pH≤4.6 process line / uniform anti-botulism acid / 5% vinegar / about 1 week / fresh-pack≠fermented / weigh exactly. Salt page (re-verified 2026-09-17): pickling salt recommended / non-iodized usable / anti-caking→cloudiness (quality) / flake salt not recommended / reduced-sodium salt with caution in fermentation; sourced to USDA Bull. 539 (2015). Paraphrase + link + context, no verdicts.

D5 · Xian 2026 (abstract level)

Food Res Int 233:118973, PMID 41956654 (re-verified via eutils): continuous rounds + new/old brine + succession–flavor coupling (two-dimensional GC-MS + metatranscriptomics); authors declare no conflicts. Record-level conclusions only; species/metabolite detail awaits full text (TO-VERIFY).

D6 · landscape (never evidence)

The murături asortate clip “1 tablespoon coarse salt / liter ≈ 20g”: a grade-C individual recipe, only a counter-example of “recipe intent vs this site's intent”. landscape link. This site sets no target values because no basis for a universal number exists + intent mismatch, not because of the clip.

Why this site never answers recipe-ratio intent

Recipe-ratio intent asks for one universal number; this site has no basis to give it (salt type, ingredient, temperature, time, vessel — all variables, no documented universal standard). The calculator + the NCHFP weighing rule are the alternative satisfaction. We do not deny that valid recipes exist in specific contexts.

Corpus and JSON are this site's local research (pinned to the corpus version); NCHFP is public USDA cooperative-extension material, paraphrased with source links; Xian 2026 cited at abstract level (DOI/PMID). Glossary renderings EDIT-finalized + back-translation checked, see the build report.
